Pork Adobo with Potato
Pork Adobo with Potato is a deeply savory soy-vinegar braise with tender pork and sauce-soaked potatoes.

Ingredients for Pork Adobo with Potato
- 2 tablespoons cooking oil
- 5 cloves garlic, crushed
- 2 lb pork, cubed
- 1 tablespoon whole peppercorns
- 1/2 cup soy sauce
- 1 cup water, plus more as needed
- 3 dried bay leaves
- 1/4 cup white vinegar
- 2 medium potatoes, cubed
- Salt, to taste, optional
How to cook Pork Adobo with Potato
- 1.Heat oil over medium heat and sauté garlic about 30 seconds, until lightly browned.
- 2.Add pork and peppercorns; cook 3–4 minutes, stirring occasionally.
- 3.Add soy sauce, water, and bay leaves; boil, cover, and simmer on low 40–60 minutes until pork is tender.
- 4.Add vinegar and boil 1 minute before stirring. Add potatoes, cover, and simmer 10–12 minutes until tender but intact.
- 5.Add salt only if needed; reduce the sauce a few minutes for a thicker adobo, then serve hot with rice.
