Inihaw na Baboy
Inihaw na Baboy is smoky grilled pork belly with a lively garlic-chili vinegar dip.

Ingredients for Inihaw na Baboy
- 1 kg pork belly, sliced 1/2 to 3/4 inch thick
- Juice of 2 lemons
- 1 whole garlic, minced
- 4 tbsp soy sauce
- 1 tsp sugar
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/2 cup white vinegar
- 2 cloves garlic, minced
- 2 red chillies, chopped
- 1 small shallot, finely chopped
- 1 tbsp sugar
How to cook Inihaw na Baboy
- 1.Mix lemon juice, whole minced garlic, soy sauce, 1 teaspoon sugar, salt, and pepper. Coat pork evenly, cover, and refrigerate at least 6 hours.
- 2.Mix vinegar, 2 minced garlic cloves, red chillies, shallot, 1 tablespoon sugar, salt, and pepper for the dipping sauce; set aside.
- 3.Heat charcoal until amber-red. Grill pork 4 to 6 minutes per side, turning once, until browned and cooked through.
- 4.Rest briefly, then serve hot with the vinegar dip.
