Bacon and Egg Filipino Chicken Adobo
Bacon, eggs, and a sweet-savory adobo braise turn chicken into a rich family-style meal.

Ingredients for Bacon and Egg Filipino Chicken Adobo
- 2 pounds chicken, cut into serving pieces
- 4 boiled eggs
- 5 bacon strips, chopped
- 3/4 cup water
- 1 tablespoon brown sugar
- Salt, optional, to taste
- 5 cloves garlic, crushed
- 1/4 cup soy sauce
- 1/2 cup white vinegar
- 1 tablespoon whole peppercorns
How to cook Bacon and Egg Filipino Chicken Adobo
- 1.Combine chicken, garlic, soy sauce, vinegar, and peppercorns. Cover and marinate at least 3 hours.
- 2.Cook bacon in a pan over medium heat until crisp and its fat renders; remove bacon.
- 3.Pan-fry chicken and marinade garlic in the bacon fat over medium heat for 3 minutes per side.
- 4.Add remaining marinade, water, and bacon. Bring to a boil, cover, and simmer over low-medium heat for 30 minutes.
- 5.Stir in brown sugar, add boiled eggs, and cook 2 minutes. Season with salt if needed.
