Dinakdakan
Dinakdakan is a smoky Ilocano pork salad folded with mayonnaise, vinegar, aromatics, and chillies.

Ingredients for Dinakdakan
- 500 g pork cheeks
- 500 g pork ears, preferably thick ends
- 1 thumb-sized ginger, finely chopped
- 2 red onions, finely chopped
- 4 cloves garlic, crushed with skin on
- 4 bird's eye chillies, finely chopped
- 1/4 cup cane vinegar
- 2/3 cup mayonnaise
- 4 bay leaves
- Sliced green chillies, for garnish
- Freshly ground black pepper, to taste
- Salt, to taste
How to cook Dinakdakan
- 1.Cover pork cheeks and ears with water in a large pot; add garlic, bay leaves, salt, and black pepper.
- 2.Bring to a boil, reduce heat, and simmer about 45 minutes until tender. Drain well.
- 3.Heat a grill pan over medium-high heat and grill pork until lightly charred and crisp at the edges.
- 4.Chop pork into bite-sized pieces and place in a mixing bowl.
- 5.Add ginger, red onions, bird's eye chillies, mayonnaise, cane vinegar, salt, and pepper; toss until evenly coated.
- 6.Transfer to a platter, garnish with sliced green chillies, and serve.
