Brazo de Mercedes is a tender baked meringue roll filled with a lemony cashew custard.

Ingredients for Brazo de Mercedes
2 cups condensed milk
4 cups full-cream milk
2 tbsp vanilla extract, divided
20 egg yolks, divided
1/2 cup ground toasted cashews, divided
Zest of 2 lemons, divided
1 cup sugar
2 tbsp butter
10 egg whites
3/4 cup sugar
1 tsp vanilla extract
1 tsp cream of tartar
Butter, for greasing
Icing sugar, for dusting
How to cook Brazo de Mercedes
1.For the filling, combine condensed milk, 10 yolks, 1 tablespoon vanilla, 1/4 cup cashews, and zest of 1 lemon over low heat.
2.Stir until a thick paste forms, then cool completely. Alternatively, reduce full-cream milk with 1 cup sugar to 2 cups before making the same filling.
3.Heat oven to 200°C. Beat egg whites and cream of tartar to stiff peaks; gradually beat in 3/4 cup sugar and 1 teaspoon vanilla.
4.Spread meringue over butter-greased baking paper on a large tray. Bake about 10 minutes until browned.
5.Invert onto another greased, paper-lined tray with the browned side down; cool 15 minutes.
6.Spread with filling, roll into a log, and dust with icing sugar.
