Batangas Bulalo
Batangas Bulalo is a clean, long-simmered beef shank soup served with a sharp chili-citrus dip.

Ingredients for Batangas Bulalo
- 3–4 lb beef shank with extra bones
- 4 medium red onions, sliced
- 1 tbsp whole peppercorns
- 1 1/2 tbsp rock salt or coarse sea salt
- 4–5 tbsp fish sauce
- 8–10 cups water
- 1 small cabbage
- 3 bunches baby bok choy
- 5–7 chili peppers
- 4 tbsp fish sauce
- 1 lemon or 3 calamansi
How to cook Batangas Bulalo
- 1.Bring water to a boil, add beef shank and bones, cover, and boil over low-medium heat for 1 hour.
- 2.Skim off floating scum and oil.
- 3.Add onions, peppercorns, salt, and 4–5 tablespoons fish sauce; cover and simmer for 3 hours.
- 4.Arrange cabbage and bok choy in a large bowl, then place beef and bones over the vegetables.
- 5.Ladle over the hot broth.
- 6.Serve with chili peppers, remaining fish sauce, and lemon or calamansi for dipping.
