Kilawing Kambing

Tender goat skin is chilled in a sharp, spicy vinegar dressing.

Ingredients for Kilawing Kambing

  • 2 lb cleaned goat skin
  • 2 qt water
  • 4 tablespoons crushed ginger
  • 6 tablespoons white vinegar
  • 1 1/2 teaspoons sugar
  • 1 tablespoon fish sauce
  • 2 tablespoons minced ginger
  • 1 onion, minced
  • 10 Thai chillies, chopped
  • 1/2 teaspoon onion powder
  • 2 tablespoons chili Knorr Liquid Seasoning
  • 1/4 teaspoon ground black pepper

How to cook Kilawing Kambing

  1. 1.Boil goat skin with water and crushed ginger for 1 hour, or until tender; drain and cool.
  2. 2.Chop the cooled skin into small pieces.
  3. 3.Whisk vinegar and sugar until dissolved, then stir in fish sauce, minced ginger, onion, chillies, and black pepper.
  4. 4.Mix in goat skin, onion powder, and chili liquid seasoning until evenly coated.
  5. 5.Cover and refrigerate for at least 1 hour before serving.
