Chicken Kare-Kare sa Gata
A rich coconut chicken kare-kare with vegetables and savory bagoong alamang on the side.

Ingredients for Chicken Kare-Kare sa Gata
- 1 1/2 lb chicken, cut into serving pieces
- 1 Knorr Chicken Cube
- 1 cup ground peanuts
- 2 bunches baby bok choy
- 1 Chinese eggplant, sliced
- 8 snake beans
- 1 onion, chopped
- 5 cloves garlic, chopped
- 2 teaspoons paprika
- 1 teaspoon turmeric powder
- 1/4 cup bagoong alamang
- 3 cups coconut milk
- 5 tablespoons cooking oil
- Ground black pepper, to taste
- 1 teaspoon salt
How to cook Chicken Kare-Kare sa Gata
- 1.Rub chicken with salt; rest for 5 minutes.
- 2.Heat 3 tablespoons oil over medium-high heat. Fry chicken for 2 minutes per side, then remove.
- 3.Add remaining oil; sauté garlic and onion until translucent. Stir in coconut milk, paprika, and turmeric; bring to a boil.
- 4.Return chicken and add the Knorr Chicken Cube. Cover, reduce to low-medium, and simmer for 25 minutes.
- 5.Stir in ground peanuts until smooth. Add eggplant and snake beans; cover and cook 5–8 minutes.
- 6.Add bok choy and cook 3 minutes. Season with pepper and serve with bagoong alamang.
