Puto Calasiao
Puto Calasiao is a lightly sweet, fermented rice cake with a pleasantly chewy crumb.

Ingredients for Puto Calasiao
- 1 cup medium-grain rice
- 1/4 cup glutinous rice
- 1 1/4 cups water, for soaking
- 3/4 cup plus 1 tbsp sugar
- 1/2 tsp yeast
How to cook Puto Calasiao
- 1.Combine both rices and water in a container, preferably earthenware. Soak for 2 days.
- 2.Drain, reserving the soaking liquid. Blend rice with 1 tbsp sugar, adding reserved liquid gradually until smooth like pancake batter.
- 3.Cover the batter with pierced plastic wrap and ferment somewhere warm for 3–4 days, until noticeably thicker.
- 4.Fold in 3/4 cup sugar. Fill greased puto molds, let rise 1 hour, then steam 15–20 minutes until puffed and set.
- 5.Unmold and serve warm or at room temperature.
