Chicken and Miswa Soup
Chicken and miswa soup is a light, soothing bowl with annatto-tinted broth and tender noodles.

Ingredients for Chicken and Miswa Soup
- 1/2 pound boneless chicken breast
- 3 to 4 cups chicken broth
- 3 cups water
- 4 ounces miswa (Chinese vermicelli)
- 1/2 cup chopped green onions
- 1 small yellow onion, minced
- 4 cloves garlic, crushed and minced
- 2 tablespoons cooking oil
- 1 teaspoon annatto powder (atsuete powder)
- Salt and ground black pepper, to taste
How to cook Chicken and Miswa Soup
- 1.Bring the water to a boil, add chicken, and cook 15 to 18 minutes until cooked through.
- 2.Remove chicken, cool slightly, then shred; reserve the cooking liquid.
- 3.Heat oil in a clean pot. Sauté onion and garlic until soft, then cook shredded chicken for 2 minutes.
- 4.Stir in atsuete powder, reserved cooking liquid, and chicken broth. Boil, cover, and simmer 15 minutes.
- 5.Add miswa and cook 2 minutes until tender. Season with salt and pepper.
- 6.Stir in green onions and serve hot.
