Ginataang Hipon Sitaw at Kalabasa
Ginataang Hipon Sitaw at Kalabasa is a creamy coconut shrimp stew with sweet squash and greens.

Ingredients for Ginataang Hipon Sitaw at Kalabasa
- 1 lb shrimp, cleaned
- 10 string beans (sitaw), cut into 2 1/2-inch lengths
- 2 cups kalabasa, cubed
- 2 cups coconut milk
- 1 medium yellow onion, sliced
- 2 tablespoons bagoong alamang
- 1 cup malunggay leaves
- 3 cloves garlic, crushed
- Salt and ground black pepper, to taste
- 3 tablespoons cooking oil
How to cook Ginataang Hipon Sitaw at Kalabasa
- 1.Heat oil over medium heat and sauté garlic and onion until the onion softens.
- 2.Add shrimp and cook 1 to 2 minutes, just until pink; remove and set aside.
- 3.Add bagoong alamang and coconut milk to the pot. Stir and bring to a boil.
- 4.Add kalabasa and cook 8 to 12 minutes until tender.
- 5.Return shrimp and cook 1 minute. Add sitaw and malunggay, then cook 2 to 3 minutes.
- 6.Season with salt and pepper, then serve hot.
