Lengua a la Vinagreta
Lengua a la vinagreta is tender chilled ox tongue dressed in a sharp egg-and-herb vinaigrette.

Ingredients for Lengua a la Vinagreta
- 1 lb ox tongue, cleaned
- 1 clove garlic, minced
- 1 small onion, minced
- 1 tbsp parsley, minced
- ½ cup olive oil
- 1 tsp red bell pepper, minced
- ¼ cup white wine vinegar
- 2 hard-boiled eggs, chopped
- 6–8 cups water
- Salt and pepper, to taste
How to cook Lengua a la Vinagreta
- 1.Bring water to a boil, add ox tongue and 3 tbsp salt, and simmer about 1 hour until tender.
- 2.Cool the tongue, peel away its skin with a paring knife, and slice it thinly.
- 3.Combine garlic, onion, parsley, bell pepper, olive oil, vinegar, chopped eggs, salt, and pepper.
- 4.Toss sliced tongue with the vinaigrette, cover, and refrigerate overnight.
- 5.Serve cold as an appetizer, with or without the dressing.
