Bulanglang na Gulay (Batangas)
Bulanglang na Gulay is a clean, vegetable-forward Batangas soup brightened with ginger.

Ingredients for Bulanglang na Gulay (Batangas)
- 1 1/2 cups malunggay leaves
- 1 bunch fresh spinach
- 1 Knorr Fish Cube
- 5 Indian eggplants, halved
- 10 okra
- 1 medium patola, sliced
- 1/2 small unripe papaya, cut into wedges
- 2 cups kalabasa, cubed
- 2 medium tomatoes, wedged
- 1 medium onion, wedged
- 3 thumb-size pieces ginger, crushed
- 4 garlic cloves, crushed
- 4 to 6 cups water
- Salt, to taste
- Ground black pepper, to taste
How to cook Bulanglang na Gulay (Batangas)
- 1.Bring water to a boil in a cooking pot.
- 2.Add garlic, ginger, and onion. Cover and cook for 5 minutes.
- 3.Add tomatoes, unripe papaya, and kalabasa; cover and cook over medium heat for 3 to 4 minutes.
- 4.Add eggplant, okra, and patola; cook 3 to 5 minutes until nearly tender.
- 5.Stir in the Knorr Fish Cube and cook 2 minutes.
- 6.Add malunggay and spinach. Season with salt and pepper, then serve.
