Kaleskes
Kaleskes is an annatto-colored offal stew with a bright cane-vinegar broth.

Ingredients for Kaleskes
- 500 g beef or carabao intestines, thoroughly cleaned, parboiled, and cut into bite-sized pieces
- 500 g beef or carabao tripe, thoroughly cleaned, parboiled, and cut into bite-sized pieces
- 1/4 cup cane vinegar
- 6 cups beef stock
- 2 spring onion stalks, sliced
- 4 green finger chilies
- 2 large onions, finely chopped
- 1 whole garlic, minced
- 4 tsp annatto powder
- Freshly ground black pepper
- Sea salt
- Oil, for cooking
How to cook Kaleskes
- 1.Heat oil in a large pot over medium heat. Sauté garlic and onions until fragrant.
- 2.Add intestines, tripe, and annatto powder. Stir-fry over high heat for 5 minutes.
- 3.Pour in cane vinegar and boil for 2 minutes.
- 4.Add beef stock and green finger chilies. Bring to a boil, then simmer for 30 minutes or until tender.
- 5.Season with sea salt and black pepper, stir in spring onions, and serve.
