Carne Frita
Carne Frita is a high-heat seared beef dish with calamansi-soy flavor, quick onions, and sesame oil.

Ingredients for Carne Frita
- 750 g beef sirloin, thinly sliced
- 2 onions, sliced into rings
- 1/2 cup water
- 1 tsp brown sugar
- 1 tsp sesame oil
- Water, as needed
- Oil
- 1/3 cup calamansi or lemon juice
- 1/2 cup Philippine soy sauce
- 1/2 tsp freshly ground black pepper
- 6 cloves garlic, minced
How to cook Carne Frita
- 1.Mix calamansi or lemon juice, soy sauce, black pepper, and garlic. Coat beef and marinate overnight.
- 2.Remove beef from the refrigerator 1 hour before cooking. Drain and squeeze dry, reserving the marinade.
- 3.Heat a lightly oiled wok over very high heat until smoking. Sear beef in batches without moving until browned, then turn and brown briefly.
- 4.Add 1/2 cup water to the wok to loosen browned bits. Boil, add reserved marinade and sugar, and reduce until thickened.
- 5.Add onions for 30 seconds, return beef, and toss with sesame oil. Remove from heat and serve.
