Tinowang Isda
A light, gingery fish soup that lets fresh talakitok shine.

Ingredients for Tinowang Isda
- 1 large talakitok (trevally), about 1 kg, cut into sections
- 1 bunch sweet potato tops or pechay, trimmed
- 1 large tomato, sliced
- 1 thumb-sized ginger, sliced
- 1 large onion, sliced
- 4 spring onions, sliced
- 3 lemongrass white sections, pounded
- 3 long red chillies, sliced
- 4 to 5 cups water
- Fish sauce, to taste
- Freshly ground pepper, to taste
How to cook Tinowang Isda
- 1.Bring the water, tomato, ginger, onion, lemongrass, and chillies to a boil in a pot.
- 2.Add talakitok, reduce to medium heat, and cook for 10 minutes until the fish is opaque and flakes easily.
- 3.Add sweet potato tops or pechay and spring onions; season with fish sauce and pepper.
- 4.Simmer for 2 minutes, then serve hot.
