Coconut and Okra Mango Curry
Coconut and Okra Mango Curry balances warm spices, sweet mango, and bright lime.

Ingredients for Coconut and Okra Mango Curry
- 2 cups diced okra
- 1 onion, diced
- 1 tomato, diced
- 2 tsp turmeric powder
- 2 tsp cumin powder
- 1 tsp paprika powder
- Salt, to taste
- 1/2 mango, diced
- 1 tbsp peanut butter
- 1 can (400 ml) coconut milk
- Juice of 1/2 lime
- Fresh coriander, for garnish
- Olive oil
How to cook Coconut and Okra Mango Curry
- 1.Heat olive oil in a pan and sauté okra until slightly browned and no longer sticky; set aside.
- 2.In the same pan, sauté onion until soft. Add turmeric, cumin, and paprika, and toast briefly until aromatic.
- 3.Add tomato and cook until soft, then add mango and simmer 1–2 minutes.
- 4.Stir in peanut butter, then coconut milk. Bring to a gentle boil, lightly mashing the mixture to thicken the sauce.
- 5.Return okra, simmer 5 minutes, and season with salt. Remove from heat, add lime juice, garnish with coriander, and serve hot.
