Pakdol
Pakdol is a clear, nourishing beef or carabao shank soup with corn, saba bananas, and greens.

Ingredients for Pakdol
- 2 kg beef or carabao shank with marrow bones
- 1 large onion, quartered
- 1 tbsp whole peppercorns
- 1 tbsp salt, plus more to taste
- 3 corn cobs, cut into pieces
- 5 saba bananas, halved
- 1/2 head cabbage, cut into wedges
- 1 bunch pechay or mustasa, optional
- Water, enough to cover
- Spring onions, for garnish
How to cook Pakdol
- 1.Cover shank and marrow bones with water, bring to a boil, discard the water, and rinse the meat.
- 2.Return meat to the pot with fresh water, onion, peppercorns, and salt. Simmer gently 2 1/2 hours until tender.
- 3.Add corn and cook 10 minutes.
- 4.Add saba bananas and cook 10 to 12 minutes until just tender.
- 5.Add cabbage and pechay or mustasa; simmer 5 minutes. Adjust salt, garnish with spring onions, and serve hot.
