Aligue and Prawn Pasta
Creamy aligue coats pasta with quickly seared prawns and squid in a luxurious seafood sauce.

Ingredients for Aligue and Prawn Pasta
- 250 g spaghetti or other pasta
- 300 g prawns, shelled
- 2 to 3 long squid, sliced into rings
- 3 heaping tbsp aligue (crab fat)
- 1/2 cup cream
- 1/2 cup white wine
- 1/2 cup shrimp stock
- 6 cloves garlic, minced
- 1 onion, finely chopped
- 2 tbsp parsley, chopped
- Juice of 1/2 lemon
- 1/4 cup grated Parmesan, plus more to serve
- Olive oil
- Salt
- Freshly ground black pepper
How to cook Aligue and Prawn Pasta
- 1.Cook pasta according to package directions; drain and set aside.
- 2.Season prawns and squid with salt and pepper. Sear in very hot olive oil until half-cooked, then remove.
- 3.Lower heat to medium and sauté garlic and onion in more oil until lightly browned.
- 4.Add wine and scrape up browned bits. When reduced and browned, stir in aligue and shrimp stock; boil, then reduce to low.
- 5.Add pasta, seafood, parsley, and cream. Raise heat and toss until the sauce coats everything evenly.
- 6.Add lemon juice and Parmesan; adjust salt and pepper. Serve immediately with extra Parmesan.
