Minatamis na Saging

Minatamis na Saging is a warmly caramelized saba dessert with optional sago and milk.

Ingredients for Minatamis na Saging

  • 6 medium ripe cardaba or saba bananas, sliced
  • 2 cups brown sugar
  • 3 cups water
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup cooked black sago pearls, optional
  • Evaporated milk, optional

How to cook Minatamis na Saging

  1. 1.Cook black sago pearls according to the package directions, if using.
  2. 2.Melt 1 tablespoon brown sugar in a saucepan over medium heat until lightly caramelized.
  3. 3.Carefully add water. Bring to a boil, then add remaining sugar, salt, and vanilla; simmer 10 minutes until dissolved.
  4. 4.Add bananas and cook 10 to 15 minutes until tender but still holding their shape.
  5. 5.Stir in sago, if using. Spoon into dessert bowls and finish with evaporated milk, if desired.
