Bibingkoy
Bibingkoy pairs baked glutinous rice balls with red bean filling and a warm jackfruit-coconut topping.

Ingredients for Bibingkoy
- 4 cups glutinous flour
- Water, as needed
- 1 cup sweetened red bean paste
- Banana leaf
- 2 cups coconut milk
- 1/2 cup ripe jackfruit, cut into strips
- 1 cup white sugar
- 1/2 cup cooked tapioca pearls
How to cook Bibingkoy
- 1.Gradually mix water into glutinous flour until a workable dough forms; knead 5 minutes.
- 2.Flatten small pieces of dough, enclose 1 tablespoon red bean paste, and shape into balls smaller than golf balls.
- 3.Arrange on a greased banana-leaf-lined baking pan. Bake at 180°C for 10 minutes, then broil at 180°C for 10 minutes.
- 4.Boil coconut milk, jackfruit, and sugar; simmer on low 10 minutes, until the topping turns golden.
- 5.Add tapioca pearls and cook 3 minutes. Spoon topping over bibingkoy and serve.
