Ginataang Manok
Ginataang Manok is a creamy coconut chicken stew with green papaya, bok choy, and chilies.

Ingredients for Ginataang Manok
- 1 kg chicken legs and thighs
- 1 medium green papaya, sliced
- 2 cups coconut milk
- 1 cup coconut cream
- 1 cup chicken stock
- 1 packet bok choy
- 4 cloves garlic, minced
- 1 large onion, sliced
- 1 thumb ginger, julienned
- 2 green finger chilies
- Freshly ground black pepper, to taste
- Fish sauce or sea salt, to taste
- Oil, for cooking
How to cook Ginataang Manok
- 1.Heat oil in a pot and sauté garlic, onion, and ginger until fragrant. Add chicken and brown on all sides.
- 2.Add chicken stock and 1 cup coconut milk. Bring to a boil, then simmer over low heat for 25 minutes.
- 3.Add remaining coconut milk, green finger chilies, and papaya; simmer 10 minutes until papaya begins to soften.
- 4.Add bok choy and coconut cream; simmer 5 minutes until chicken is cooked through and greens wilt.
- 5.Season with fish sauce or salt and black pepper, then serve.
