Spicy Adobong Tahong
Spicy Adobong Tahong turns plump mussels into a buttery vinegar-soy adobo.

Ingredients for Spicy Adobong Tahong
- 4 pounds fresh mussels
- 1 teaspoon rock salt
- Water, for soaking
- 1 thumb-size ginger, sliced
- 1 cup water, for steaming
- 3 tablespoons oil
- 1 medium yellow onion, finely chopped
- 1/2 head garlic, minced
- 1/4 cup vinegar
- 1/4 cup soy sauce
- 2 bay leaves
- 1/4 teaspoon crushed peppercorns
- 1 teaspoon brown sugar (optional)
- 2 chili labuyo, each cut into 4
- 1–2 tablespoons butter
How to cook Spicy Adobong Tahong
- 1.Soak mussels in water with rock salt for 20 minutes.
- 2.Steam mussels with 1 cup water and ginger over medium heat until shells open. Cool, reserve broth, remove meat, and discard beards.
- 3.Sauté onion and garlic in oil over medium heat until lightly browned and fragrant.
- 4.Add vinegar, soy sauce, 1/4 cup reserved broth, bay leaves, and peppercorns; simmer unstirred for 5 minutes.
- 5.Add mussels, brown sugar, butter, and chili labuyo; cook 5 minutes, until sauce thickens.
