Crabs in Coconut Milk (Ginataang Alimango)
Ginataang Alimango combines tender mud crab, squash, beans, and chili in thick coconut milk.

Ingredients for Crabs in Coconut Milk (Ginataang Alimango)
- 4 large mud crabs
- 1/2 tsp salt
- 2 tbsp vegetable oil
- 1–2 cloves garlic, minced
- 1 medium onion, chopped
- 1 1/2 cups squash, cubed
- 1/2 cup water or crab stock
- 1 can coconut milk (13.5 fl oz)
- 1 cup yardlong beans, cut into 2-inch pieces
- 1–2 red or green chili peppers
- Fish sauce, for seasoning
How to cook Crabs in Coconut Milk (Ginataang Alimango)
- 1.Bring enough water to boil in a large pot. Add crabs head-first, salt, and simmer 10 minutes; halve crabs and reserve 1/2 cup cooking liquid.
- 2.Sauté garlic and onion in oil over medium heat until tender and aromatic. Add squash and water or reserved crab stock.
- 3.Simmer until squash is tender, then add coconut milk and cook until squash is very soft and the sauce is thickened.
- 4.Add crab, yardlong beans, chili, and fish sauce. Simmer 10–15 minutes until beans are tender and sauce thickens.
- 5.Transfer to a serving dish and serve with steamed rice.
