Ube Ice Cream
Ube Ice Cream is a creamy churned custard with the earthy sweetness of cooked purple yam.

Ingredients for Ube Ice Cream
- 2 1/2 cups cream
- 1 1/2 cups milk
- 1 1/4 cups sugar
- 4 egg yolks, lightly beaten
- 2 cups cooked mashed ube (purple yam)
- 1 tsp vanilla extract
- Red food coloring, as needed
- Blue food coloring, as needed
How to cook Ube Ice Cream
- 1.Warm cream, milk, and sugar in a saucepan over low heat, stirring until sugar dissolves and the mixture is nearly boiling.
- 2.Whisk about 1 cup hot cream mixture gradually into egg yolks, then return the yolks to the saucepan.
- 3.Cook while stirring until the custard coats the back of a spoon; do not boil.
- 4.Transfer to a heatproof container; tint with red and blue food coloring, then stir in vanilla.
- 5.Cool completely and refrigerate at least 4 hours.
- 6.Churn the custard with mashed ube according to the ice-cream maker directions, about 30 to 35 minutes.
- 7.Serve soft, or freeze at least 6 hours for a firmer scoop.
