Binabad
Binabad is marinated pork shoulder simmered until the liquid dries, then pan-fried until caramelized at the edges.

Ingredients for Binabad
- 1 kg pork shoulder chops, sliced into bite-sized pieces
- 1 cup water
- Cooking oil
- 10 g annatto powder
- 4 tablespoons soy sauce
- Juice of 1 lemon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon ground black pepper
- 6 cloves garlic, minced
How to cook Binabad
- 1.Mix annatto powder, soy sauce, lemon juice, salt, baking soda, black pepper, and garlic in a bowl.
- 2.Coat pork with the marinade in a sealed bag or covered bowl, then refrigerate overnight.
- 3.Transfer pork and marinade to a wok, add 1 cup water, cover, and cook over medium heat 30 to 40 minutes until liquid evaporates.
- 4.Add a little oil, raise heat to medium-high, and pan-fry about 5 minutes until the pork edges caramelize.
- 5.Transfer to a serving dish and serve hot.
