Ingredients for Sprite Pork Adobo
2 lbs pork belly, cubed
7 tablespoons soy sauce
4 tablespoons white vinegar
1 can Sprite or similar lemon-lime soda
1 onion, minced
5 dried bay leaves
1 1/2 teaspoons whole peppercorns
5 cloves garlic, crushed
1/2 cup water, as needed
3 tablespoons cooking oil
How to cook Sprite Pork Adobo
1.In a large bowl, combine the pork belly, soy sauce, and Sprite; cover and refrigerate for at least 6 hours to marinate.
2.Drain the pork through a sieve, reserving the soy-Sprite marinade separately.
3.Heat the cooking oil in a pot over medium heat. Saute the garlic until lightly browned, then add the onion and cook until softened.
4.Add the drained pork and cook, stirring, until the pieces are lightly browned on the outside.
5.Pour in the reserved marinade, cover, and bring to a boil. Add the peppercorns and bay leaves, then cook covered over medium heat for 30 minutes.
6.Add the vinegar and let the sauce return to a boil before stirring. Cover and cook for 25 to 30 minutes more, adding the water only if the sauce reduces too much before the pork is tender.
7.Serve hot with steamed rice once the pork is tender and the sauce is savory, tangy, and slightly reduced.
