Bas-Uy
Bas-Uy is a warming pork, liver, and chayote soup scented with ginger and lemongrass.

Ingredients for Bas-Uy
- 2 large chayote, sliced
- 400 g pork shoulder, thinly sliced
- 150 g pork liver, thinly sliced
- 2 tomatoes, sliced
- 4 stalks spring onions, chopped
- 1 thumb ginger, julienned
- 1 white onion, finely chopped
- 6 cloves garlic, minced
- 2 stalks lemongrass, pounded and tied
- 6 cups pork stock
- Oil
- Fish sauce
- Freshly ground black pepper
How to cook Bas-Uy
- 1.Heat oil in a pot and brown pork liver; remove and set aside.
- 2.Add more oil if necessary, then sauté garlic, onion, and ginger until softened.
- 3.Add pork and stir-fry over medium-high heat for 5 minutes. Add tomatoes and cook until soft.
- 4.Pour in pork stock, add tied lemongrass, bring to a boil, and simmer 30 minutes.
- 5.Return liver and add chayote; cook 8 minutes. Add spring onions for 2 minutes, season, and serve.
