Ampalaya con Carne
Tender beef strips and crisp-bitter ampalaya come together in a glossy savory sauce.

Ingredients for Ampalaya con Carne
- 500 g beef tenderloin, thin strips
- 1 large or 2 small bitter gourds, cored and thinly sliced
- 3 tablespoons oyster sauce
- 2 tablespoons soy sauce
- 1/4 cup plus 2 tablespoons Chinese cooking wine
- 1 teaspoon cornstarch
- 2 teaspoons tapioca starch
- 4 cloves garlic, minced
- 1 shallot, thinly sliced
- Freshly ground black pepper, to taste
- 1/2 teaspoon baking soda
- 1/2 cup water
- Salt, to taste
- Peanut oil
- Sesame oil
How to cook Ampalaya con Carne
- 1.Mix cornstarch, 2 tablespoons Chinese cooking wine, salt, and baking soda; coat beef and set aside.
- 2.Heat peanut oil with a little sesame oil in a wok over high heat. Sauté garlic and shallot.
- 3.Stir-fry beef in batches for 3 minutes; remove.
- 4.Add bitter gourd and 1/4 cup water. Cover and cook 2 minutes, until water evaporates.
- 5.Return beef to the wok. Mix remaining water, tapioca starch, oyster sauce, soy sauce, and remaining wine; add and bring to a boil.
- 6.Turn off heat when sauce thickens; season with black pepper and serve.
