Adobong Tahong (Mussels Adobo)
Adobong Tahong coats tender mussels in a sharp, garlicky soy-vinegar sauce.

Ingredients for Adobong Tahong (Mussels Adobo)
- 1 lb mussels, cleaned and shells removed
- 3 cloves garlic, crushed
- 3 tablespoons soy sauce
- 2 tablespoons white vinegar
- 4 dried bay leaves
- 1/2 tablespoon whole peppercorns
- 2 tablespoons toasted garlic
- 2 tablespoons cooking oil
- Salt, to taste
How to cook Adobong Tahong (Mussels Adobo)
- 1.Heat oil in a pot over medium heat. Cook crushed garlic and peppercorns until the garlic is light brown.
- 2.Add mussels and stir for 2 minutes.
- 3.Add bay leaves, soy sauce, and 1 tablespoon toasted garlic. Bring to a boil, then simmer for 5 to 7 minutes.
- 4.Pour in vinegar, let the sauce return to a boil, then stir and cook for 3 minutes.
- 5.Season with salt, transfer to a plate, and top with remaining toasted garlic.
