Ingredients for Nilagang Pata (Boiled Pork Hock Soup)
2 lbs pork hock or pata, sliced
5 cups water
2 cups beef stock or beef broth, optional
1 large bunch baby bok choy or pechay
1 tablespoon whole peppercorns
2 tablespoons fish sauce or patis
1 medium yellow onion, sliced
1 large potato, cubed
4 ripe saba bananas, sliced
How to cook Nilagang Pata (Boiled Pork Hock Soup)
1.Combine the water and beef stock or broth, if using, in a large pot and bring to a boil.
2.Add the onion, whole peppercorns, and sliced pork hock, then simmer for about 60 minutes until the pork is tender, adding water as needed to keep it covered.
3.Add the cubed potato and sliced saba bananas and cook for 10 minutes, or until the potato is tender.
4.Stir in the fish sauce and baby bok choy or pechay, then turn off the heat, cover the pot, and let the greens wilt in the hot broth for 10 minutes.
