Balut and Penoy are warming Filipino duck-egg street snacks best enjoyed simply with salt.

Ingredients for Balut at Penoy

  • 4 raw balut duck eggs
  • 4 raw penoy duck eggs
  • Salt, for serving
  • Warm cloth, optional

How to cook Balut at Penoy

  1. 1.Place balut in a steamer over boiling water and steam for 25 minutes.
  2. 2.For penoy, place eggs in a saucepan, cover with water, bring to a boil, and cook 15 minutes for hard-boiled eggs.
  3. 3.Keep cooked eggs warm in a basket lined with a warm cloth, if desired.
  4. 4.For balut, crack the top, make a small opening, and sip the broth before eating the contents with salt.
  5. 5.Crack and peel penoy like a regular hard-boiled egg; season with a pinch of salt.
