Sinigang na Bangus sa Bayabas

Sinigang na Bangus sa Bayabas is a gently sour, fragrant soup enriched with ripe guavas and fresh vegetables.

Ingredients for Sinigang na Bangus sa Bayabas

  • 1 medium bangus, cleaned, scaled, and sliced into steaks
  • 2 cups baby spinach
  • 4 to 6 ripe guavas
  • 8 okra
  • 1 small onion, cut into wedges
  • 2 medium tomatoes, cut into wedges
  • 2 jalapeno peppers
  • 2 tablespoons fish sauce
  • 1 teaspoon ground black pepper
  • 4 to 5 cups water

How to cook Sinigang na Bangus sa Bayabas

  1. 1.Bring 4 to 5 cups water to a boil in a large pot over high heat.
  2. 2.Add the guavas, tomatoes, onion, and ground black pepper. Cover, reduce slightly to a steady boil, and cook for about 15 minutes, until the guavas and vegetables are very soft; add a little more water if the level becomes too low.
  3. 3.Carefully mash the softened guavas and vegetables in the pot to release their flavor into the broth, then stir in the fish sauce.
  4. 4.Add the bangus steaks and cook over medium heat for 5–10 minutes, just until opaque and cooked through.
  5. 5.Add the okra and jalapeno peppers and simmer for 5 minutes, until the okra is tender but intact.
  6. 6.Add the baby spinach, cover the pot, turn off the heat, and let stand for 5 minutes so the greens gently wilt before serving hot.
